Directions:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, beat the egg and then mix in the buttermilk, vanilla extract, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined; the batter should be slightly lumpy.
Heat a griddle or non-stick skillet over medium heat and lightly grease it.
Pour ¼ cup of batter onto the griddle for each pancake.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip and cook the other side until golden brown, about 1-2 minutes more.
Serve warm with your favorite toppings.
