Roasted Tomato and Basil Sauce

– 2 pounds Roma tomatoes, halved
– 1/2 cup olive oil
– 1/4 cup chopped fresh basil
– 2 cloves garlic, minced
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 cup grated Parmesan cheese (optional)

1. Preheat oven to 400 degrees F (200 degrees C).
2. Toss tomatoes with olive oil, basil, garlic, salt, and pepper.
3. Spread tomatoes on a baking sheet and roast for 30-40 minutes, or until softened and slightly browned.
4. Transfer tomatoes to a blender or food processor and puree until smooth.
5. Stir in Parmesan cheese, if desired.
6. Serve over your favorite pasta or pizza.
