Memaw’s Cathead Biscuits

Ingredients
– 2 cups self-rising flour
– 1 to 2 tablespoons shortening (memaw used lard)
– 1 cup buttermilk
– 1/2 teaspoon salt

1- Measure the flour and salt into a bowl that has flour sprinkled in it.
2- Cut the lard into the flour until it’s crumbly, about pea size. You can use a fork or spoon for this step.
3- Add the buttermilk and, using your floured hands, lightly mix until a soft dough forms. If the dough is too sticky, add a bit more flour.
4- Instead of rolling out the dough, tear off pieces and roll them in your hands, just like memaw and mom did.
5- Grease a round pan well with bacon grease and place the biscuits close together, touching each other.
6- Bake in a preheated 400°F (200°C) oven for 15 to 20 minutes, or until golden brown.
7- Brush melted butter on top of the biscuits after baking.
