My Favorite Peanut Butter Cookies


1 cup (250g) smooth peanut butter

1/2 cup (100g) granulated sugar

1/2 cup (100g) brown sugar, packed

1 large egg

1 teaspoon (5ml) vanilla extract

1/2 teaspoon baking soda

A pinch of salt

Optional: Chocolate chips or chopped peanuts for topping


Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large bowl, combine the peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Stir until well mixed.

Add Dry Ingredients: Sprinkle the baking soda and a pinch of salt over the mixture. Stir until the ingredients are fully combined.

Form the Cookies: Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet. Flatten each ball slightly with a fork, creating a crisscross pattern.

Optional Toppings: If desired, press a few chocolate chips or chopped peanuts into the top of each cookie before baking.

Bake the Cookies: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges of the cookies are just starting to turn golden brown.

Cooling: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Serve and Enjoy : Once cooled, serve the cookies with a glass of milk or your favorite beverage.
