Soft Cinnamon Sugar Cookie


1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

For the Streusel Topping:

1/2 cup all-purpose flour

1/4 cup brown sugar, packed

1/4 cup unsalted butter, cold and cubed

1 teaspoon ground cinnamon


Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla.

In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Gradually beat into creamed mixture.

Drop dough by tablespoonfuls onto baking sheets.

For streusel topping, in a small bowl, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over cookies.

Bake for 12-15 minutes or until edges are golden brown. Remove to wire racks to cool.
