Cake Batter Chocolate Chip Cookies

1 and 1/4 cup all-purpose flour
1 and 1/4 cup yellow or white cake mix
1/2 teaspoon baking soda
3/4 cup unsalted butter, softened to room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg, at room temperature
1 and 1/2 teaspoons pure vanilla extract
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup rainbow sprinkles

Sift together flour, cake mix, and baking soda. Set aside.
In a large bowl, cream together the butter and sugars on medium speed.
Mix in the egg and vanilla until creamy.
Add the flour mixture and mix until just combined.
Stir in chocolate chips and sprinkles.
Cover dough and refrigerate for at least 1 hour, or up to 4 days.
Preheat oven to 350°F (177°C). Roll chilled dough into balls.
Place on a parchment-lined baking sheet and slightly press down on dough balls.
Bake for 10-12 minutes or until edges start to turn golden brown.
Allow to cool on the baking sheet for 4 minutes, then transfer to a wire rack to cool completely.
