Zucchini Pizza Bites



2 medium zucchinis, cut into rounds about 1/4 inch thick

Olive oil

Salt and pepper

Pizza sauce

Shredded mozzarella cheese

Your favorite pizza toppings (such as pepperoni, olives, bell peppers, etc.)


Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Place the zucchini rounds on the prepared baking sheet. Make sure they’re evenly spaced and not overlapping.

Carefully remove the baking sheet from the oven. The zucchini pizza bites should be golden around the edges and the cheese should be beautifully melted.
