1 lb chicken breast, cut into bite-sized pieces
2 tbsp Cajun seasoning (adjust to taste)

2 tbsp olive oil
8 oz penne pasta
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
1/2 cup cherry tomatoes, halved
2 cloves garlic, minced
Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, cook penne according to package instructions until al dente. Drain and set aside.
Season and Sear the Chicken: In a bowl, season chicken pieces with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Prepare the Sauce: In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Pour in chicken broth and heavy cream, scraping up any browned bits from the skillet. Bring to a gentle simmer, then stir in Parmesan cheese until the sauce is smooth and creamy.
Combine: Add the cooked pasta, cherry tomatoes, and chicken back to the skillet. Toss everything together until well-coated in the sauce. Simmer for another 2-3 minutes.
Serve: Garnish with fresh parsley and serve warm.
