Keto Kielbasa Soup with Cauliflower

Low-Carb Keto Kielbasa and Cauliflower Soup

1 lb kielbasa sausage, sliced
1 small onion, diced
2 garlic cloves, minced
4 cups cauliflower florets
4 cups chicken broth
1 cup heavy cream
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (optional)

Heat olive oil in a large pot over medium heat. Add the kielbasa slices and cook until browned, about 4-5 minutes. Remove and set aside.
In the same pot, add the diced onion and garlic, cooking until softened, about 3 minutes.
Add the cauliflower florets, chicken broth, smoked paprika, thyme, salt, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 10-15 minutes, or until the cauliflower is tender.
Stir in the heavy cream and return the kielbasa to the pot. Simmer for another 5 minutes until the soup is heated through.
Adjust seasoning as needed and garnish with fresh parsley before serving.
