2 cups leftover mashed potatoes
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 large egg
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons chopped fresh chives (optional)
Vegetable oil for frying

In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all the ingredients are fully incorporated.
Using a spoon or a small cookie scoop, form the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
If using, sprinkle the chopped chives over the potato balls.
In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until shimmering.
Carefully add the potato balls to the hot oil in batches, making sure not to overcrowd the skillet.
Fry the potato balls for about 2-3 minutes per side, or until golden brown and crispy.
Remove from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Serve warm and enjoy!
