Creamy Vegan Scalloped Potatoes

– 4 large potatoes, thinly sliced
– 1 cup vegan cream (e.g., coconut cream)
– 1 cup vegetable broth
– 1/2 cup nutritional yeast
– 2 garlic cloves, minced
– 1/2 tsp onion powder
– 1/2 tsp smoked paprika
– Salt and pepper to taste
– 1/4 cup vegan shredded cheese (optional)
– 1/4 cup breadcrumbs (optional, for topping)

1. Preheat your oven to 375°F (190°C). Grease a baking dish.
2. Layer half of the potato slices in the baking dish.
3. In a bowl, mix vegan cream, vegetable broth, nutritional yeast, garlic, onion powder, smoked paprika, salt, and pepper.
4. Pour half of the mixture over the potatoes.
5. Add a second layer of potato slices and pour the remaining mixture over them.
6. If using, sprinkle shredded cheese and breadcrumbs on top.
7. Cover the dish with foil and bake for 30 minutes.
8. Remove the foil and bake for another 15 minutes until the potatoes are tender and the top is golden.
9. Let cool slightly before serving.
