Ingredients:
1 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup instant coffee granules
4 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract

Directions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract, and continue mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Dissolve the instant coffee granules in a small amount of hot water (about 1 tablespoon) and stir into the dough until evenly distributed.
