1 lb (450 g) large shrimp, peeled and deveined
1/2 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
3 cloves garlic, minced
1 small red chili, finely chopped (or 1/2 tsp red chili flakes)
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp smoked paprika
1/2 tsp ground cumin
Salt and black pepper to taste
1 lemon, cut into wedges (for serving)

In a bowl, whisk together parsley, cilantro, garlic, chili, olive oil, red wine vinegar, smoked paprika, cumin, salt, and black pepper to create the chimichurri sauce.
Reserve 2 tablespoons of the chimichurri for serving.
Add shrimp to the remaining chimichurri sauce and toss to coat. Let marinate for 15-20 minutes.
Heat a large skillet or grill pan over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, until pink and fully cooked.
