1.5 lb beef strips (thinly sliced round steaks, cut into strips)

1 green bell pepper, cut into thick slices

1 red bell pepper, cut into thick slices

1/2 onion, thickly sliced

1/4 teaspoon garlic powder

1 1/2 cups beef broth

1/4 teaspoon ground ginger

3 tablespoons soy sauce

1/4 teaspoon black pepper

2 teaspoons brown sugar

1 tablespoon cornstarch

Place the beef strips, green bell pepper, red bell pepper, and sliced onion in an electric pressure cooker.

Sprinkle garlic powder, ground ginger, black pepper, and brown sugar over the beef and peppers.

Pour soy sauce over the beef and peppers.

In a separate bowl, mix cornstarch with a little water to create a slurry.

Pour the beef broth into the Instant Pot over the beef and vegetables.

Stir everything to combine.

Close the pressure cooker lid and set it to cook on high pressure for about 8-10 minutes.

Once the cooking time is complete, do a quick release of the pressure.

Open the lid carefully, and if the sauce needs thickening, turn on the sauté function and add the cornstarch slurry. Stir until the sauce thickens to your desired consistency.
