1½ lbs baby potatoes, halved
1 lb smoked sausage or kielbasa, sliced
1 medium onion, sliced
2 cloves garlic, minced
¼ cup honey or maple syrup
2 tbsp Dijon mustard
2 tbsp soy sauce
1 tbsp olive oil or butter
½ tsp dried thyme or rosemary
Salt & pepper to taste
Optional: pinch of red pepper flakes for heat
Directions:
1️ Preheat oven to 400°F (200°C).
2️ Parboil potatoes (optional but helps them cook faster): Boil halved potatoes in salted water for 5–7 minutes. Drain well.
3️ Make glaze: In a small bowl, mix honey, mustard, soy sauce, garlic, and seasonings.
4️ Sauté sausage: In an oven-safe skillet, heat oil and cook sausage until lightly browned (about 3–4 mins). Remove & set aside.
5️ Sauté onion & potatoes: In same pan, add more oil if needed. Cook onions and potatoes for 5–6 mins until golden.
6️ Combine: Return sausage to pan. Pour glaze over. Toss everything to coat.
7️ Bake: Transfer pan to oven and roast for 20–25 mins, stirring halfway, until potatoes are tender and everything is caramelized.
8️ Serve hot, garnished with parsley if desired!
