Ingredients
1 16.5 oz tube sugar cookie dough (store-bought or homemade)
1 large egg
1 tbsp vanilla extract
8 oz cream cheese softened
Optional:
Colorful sprinkles
Powdered sugar for extra sweetness
Method
Prep & Preheat
Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish with non-stick spray.
Make the Cheesecake Filling
In a bowl, beat cream cheese, egg, and vanilla until smooth.
Optional: Mix in 1-2 tbsp powdered sugar for added sweetness.
Layer the Crust
Cut cookie dough in half. Press one half evenly into the baking dish to form the base.
Assemble the Layers
Pour cheesecake filling over the crust, spreading smoothly.
Break the remaining cookie dough into small pieces and scatter over the top (they’ll melt into a golden crust as they bake).
Bake & Cool
Bake for 30 minutes, or until the top is golden.
Let cool in the pan for 1 hour (this helps the cheesecake set!).
Garnish & Serve
Top with sprinkles (if using), then cut into 9 squares.
Notes
Extra Fluffy: Use whipped cream cheese for a lighter texture.
Festive Twist: Swap sprinkles for holiday-themed colors!
Go Homemade: Replace store-bought dough with your favorite sugar cookie recipe.
