• 4 catfish fillets
• 1 cup shrimp, peeled and deveined
• 2 cups fresh spinach
• 1 cup shredded mozzarella cheese
• 1/2 cup cream cheese, softened
• 1/4 cup grated Parmesan cheese
• 2 cloves garlic, minced
• 1 tablespoon olive oil
• 1 teaspoon lemon zest
• Salt and pepper to taste
• 1 tablespoon lemon juice
• 2 tablespoons breadcrumbs (optional for topping)
• Fresh parsley, chopped, for garnish

Instructions:
1. Preheat your oven to 375°F (190°C).
2. Prepare the filling: In a skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Add the shrimp and cook until they turn pink. Stir in the spinach and cook until wilted. Remove from heat.
3. Mix the cheeses: In a medium bowl, combine the cooked shrimp and spinach mixture with mozzarella cheese, cream cheese, Parmesan cheese, lemon zest, salt, and pepper. Mix until well blended.
4. Stuff the catfish: Place the catfish fillets on a flat surface. Spoon the spinach and shrimp mixture onto one half of each fillet, then fold the other half over to create a pocket. Secure with toothpicks if needed.
5. Bake the catfish: Place the stuffed fillets in a baking dish. Drizzle with lemon juice and sprinkle with breadcrumbs (if using). Bake in the preheated oven for about 20-25 minutes or until the fish flakes easily with a fork.
