In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until caramelized, about 5-7 minutes.

Place the chicken breasts in the slow cooker. Sprinkle with smoked paprika, garlic powder, onion powder, salt, and black pepper.

Add the caramelized onions on top of the chicken.

Pour the chicken broth and barbecue sauce over the chicken and onions.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Once cooked, remove the chicken from the slow cooker and shred it using two forks.

Return the shredded chicken to the slow cooker and mix it with the sauce until well coated.

Serve hot with your choice of sides.

Servings: 6

Variations & Tips

For a spicier version, add a teaspoon of cayenne pepper or a few dashes of hot sauce to the sauce mixture. You can also use chicken thighs instead of breasts for a richer flavor. If you prefer a sweeter sauce, mix in a tablespoon of honey or brown sugar. For a smoky twist, add a few drops of liquid smoke to the sauce. This recipe is also great with pork or beef if you’re looking to switch up the protein.
