Optional add-ins: 1 smashed garlic clove, ½ tsp black peppercorns, 1 bay leaf, or a pinch of red pepper flakes

Prep the onions: Place the sliced onions in a clean 16 oz glass jar or airtight container. If using optional spices, add them to the jar.

Make the brine: In a small saucepan, combine vinegar, water, sugar, and salt. Warm over medium heat, stirring until the sugar and salt dissolve (about 2–3 minutes). Do not boil.

Pickle the onions: Pour the hot brine over the onions, ensuring they’re fully submerged. Let cool uncovered to room temperature.

Chill & serve: Seal the jar and refrigerate. Onions will be ready in 1 hour but develop better flavor after a few hours or overnight.
Storage: Keeps in the fridge for up to 2 weeks.
