One-Pan White Cheddar Mozzarella Pasta

12 oz pasta (penne, rigatoni, or shells)
2 tbsp unsalted butter
3 cloves garlic, minced
2 cups whole milk
1 cup heavy cream
1 cup low-sodium chicken or vegetable broth
1 tsp Dijon mustard
½ tsp salt
½ tsp black pepper
1 ½ cups shredded white cheddar cheese
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ tsp red pepper flakes (optional)
2 tbsp chopped fresh parsley (for garnish)

Cook the Garlic: In a large, deep skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Simmer the Sauce: Pour in the milk, heavy cream, and broth. Stir in Dijon mustard, salt, and black pepper. Bring to a gentle simmer.

Cook the Pasta: Add the dry pasta directly to the skillet, stirring to ensure it’s submerged. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.

Melt the Cheese: Reduce heat to low and stir in white cheddar, mozzarella, and Parmesan cheese until melted and smooth. If the sauce is too thick, add a splash of milk.

Serve & Enjoy: Garnish with red pepper flakes and fresh parsley. Serve warm.
