Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin pan or use a silicone one.

In a saucepan over medium heat, melt the butter completely. Pour in the milk and bring to a gentle boil.

Reduce heat to low and add the flour all at once. Stir vigorously until the mixture forms a smooth dough that pulls away from the sides of the pan.

Remove from heat and let cool for 5 minutes.

Beat in the eggs one at a time, mixing well after each addition until the batter is glossy and smooth. (Add sugar here if using.)

Spoon the batter evenly into the muffin cups. Sprinkle a bit of sugar on top of each puff for extra sparkle!

Bake for 30–35 minutes, or until golden, puffed, and crisp on top.
