Loaded Cowboy BBQ Tater Tot Nachos

1 (32 oz) bag frozen tater tots
1 lb ground beef or ground sausage
½ cup BBQ sauce
1 cup canned black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 ½ cups shredded cheddar cheese
½ cup diced red onion
¼ cup pickled jalapeños (optional)
½ cup sour cream
2 green onions, sliced (for garnish)
Optional: chopped cilantro, diced tomatoes, or avocado

Bake the tater tots according to package instructions until golden and crispy.

Brown the meat:
While tots bake, cook the ground beef (or sausage) in a skillet over medium heat until fully browned. Drain excess grease. Stir in the BBQ sauce, black beans, and corn. Simmer for 2–3 minutes to heat through.

Assemble the nachos:
Arrange the crispy tater tots on a large oven-safe tray or cast iron skillet. Spoon the BBQ beef mixture evenly over the tots.

Top with cheese and onions:
Sprinkle with shredded cheddar, red onion, and pickled jalapeños if using.

Bake:
