Homemade Garlic Shrimp Pasta

8 oz (225 g) spaghetti or linguine
1 lb (450 g) shrimp, peeled and deveined
4 tbsp butter (unsalted)
3 tbsp olive oil
5–6 garlic cloves, minced
1/2 tsp red pepper flakes (optional)
1/4 cup white wine (or chicken broth)
Juice of 1 lemon
Salt and black pepper, to taste
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese (optional)

Cook the Pasta:

Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions. Reserve 1/2 cup of the pasta water before draining. Set aside.

Prepare the Shrimp:

Pat the shrimp dry with paper towels and season lightly with salt and pepper.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and slightly golden. Remove the shrimp and set aside.

Make the Garlic Sauce:

In the same skillet, lower the heat and add 4 tablespoons of butter and 1 tablespoon of olive oil. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant (don’t burn the garlic).

Deglaze with Wine:

Pour in the white wine (or chicken broth) to deglaze the pan. Let it simmer for 2-3 minutes to reduce slightly.

Combine Everything:

Return the shrimp to the skillet. Add the cooked pasta, lemon juice, and reserved pasta water (a little at a time) to loosen the sauce. Toss everything together until well coated.

Garnish and Serve:

Sprinkle with fresh parsley and grated Parmesan cheese, if desired. Serve hot and enj
