Mediterranean-Inspired Turkey Meatballs Served with Fragrant Lemon Herb Rice

For the Meatballs:
1 pound ground turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 egg, beaten
1 tablespoon olive oil (for cooking)
For the Lemon Herb Rice:
1 cup long-grain rice
2 cups chicken broth
1 tablespoon olive oil
1 lemon, zested and juiced
1/4 cup fresh dill, chopped

1. In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, pepper, and beaten egg. Mix until well combined.
2. Form the mixture into meatballs, about 1 inch in diameter.
3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 10-12 minutes, turning occasionally, until they are browned and cooked through.
4. While the meatballs are cooking, prepare the lemon herb rice. In a saucepan, heat olive oil over medium heat. Add the rice and toast for 2-3 minutes, stirring frequently.
5. Pour in the chicken broth, lemon zest, and lemon juice. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
6. Once the rice is cooked, fluff it with a fork and stir in the fresh dill. Season with salt and pepper to taste.
7. Serve the turkey meatballs over the lemon herb rice, garnished with additional parsley or dill if desired.
