Instructions
Step 1 – Make the Batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the egg, then add milk, water, and vanilla extract.
Gradually add the wet ingredients to the dry, whisking until the batter is smooth and lump-free. It should be pourable but thick, like pancake batter.
Step 2 – Heat the Oil
In a deep skillet or saucepan, heat about 2 inches of vegetable oil over medium-high heat to 350°F (175°C). Use a thermometer for accuracy if possible.
Step 3 – Fry the Bites
Using a small cookie scoop or spoon, carefully drop bite-sized dollops of batter into the hot oil.
Fry in batches for 1–2 minutes per side, or until golden brown and puffed.
Use a slotted spoon to remove and drain on paper towels.
Step 4 – Dust and Serve
While still warm, generously dust with powdered sugar.
