Easy Bang Bang Chicken

For the chicken:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 cup buttermilk
1 cup cornstarch
Vegetable oil (for frying)
For the Bang Bang sauce:

1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tablespoon Sriracha (adjust to taste)
1 tablespoon honey
1 teaspoon lime juice

Prepare the chicken: In a bowl, season chicken with salt, black pepper, garlic powder, and paprika. Pour in buttermilk and mix well. Let marinate for 15-20 minutes.

Coat the chicken: Heat oil in a deep skillet or frying pan over medium-high heat. Dredge each piece of chicken in cornstarch, shaking off excess.

Fry until crispy: Fry the chicken in batches for 3-4 minutes per side until golden brown and fully cooked. Remove and drain on a paper towel.

Make the sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice.

Toss and serve: Toss the crispy chicken in the Bang Bang sauce until evenly coated. Serve immediately, garnished with chopped green onions or sesame seeds if desired.

Notes:

For an extra crispy texture, double-fry the chicken.
Serve with rice, lettuce wraps, or as an appetizer.
Adjust Sriracha to make it milder or spicier.
