Creamy Cajun Pasta with Shrimp, Sun-Dried Tomatoes and Spinach

– 450 g of pasta (like penne or fusilli)
– 450 g prawns, peeled and deveined
– 2 tablespoons of Cajun seasoning
Salt and pepper black ground to taste
– 2 tablespoons of olive oil
– 4 cloves of garlic, minced
– 1 large onion, finely chopped
– 1 red pepper, cut into thin slices
– 75 g dried tomatoes, chopped
– 240 ml of milk cream
– 240 ml of chicken broth
– 1 tablespoon of tomato paste
– 1 teaspoon of dried oregano
– 1 teaspoon of dried thyme
– 30 g of fresh spinach
– 50g grated Parmesan, plus extra for serving
– Red pepper flakes (optional), to serve
– Fresh chopped parsley for garnish

1. Cooking pasta: In a large pot, boil water with salt. Add the pasta and cook according to package instructions until it’s in the tooth. Hurry up and book.

2. Prepare the shrimp: In a bowl, mix the shrimp with the Cajun seasoning, salt and pepper to taste.

3. Saute the ingredients: In a large skillet, heat the olive oil over medium heat. Add the onion and red pepper, and simmer until tender, about 5 minutes. Add garlic and cook for a minute more, until fragrant.

4. Cook Shrimp: Add the seasoned shrimp to the pan and cook until pink and cooked, about 3-4 minutes. Remove the shrimp from the pan and reserve them.

5. Make the Sauce: In the same pan, add the sun-dried tomatoes, cream of milk, chicken broth, tomato paste, oregano and thyme. Bring to a boil then reduce heat to medium-low, letting sauce thicken for about 5 minutes.

6. Incorporate Spinach and Cheese: Add fresh spinach and parmesan cheese to the sauce, stirring until spinach is wilted and cheese is melted.

7. Pasta Mix: Incorporate cooked pasta and pan shrimp, mixing well to combine and coat with creamy sauce.

8. Serve: Serve pasta on plates, sprinkle with more parmesan cheese, red pepper flakes if desired, and garnish with fresh chopped parsley.

Extra Tips: This pasta can be served with a fresh green salad or garlic bread. If you prefer a touch of spiciness, add more Cajun seasoning or red pepper. Enjoy this delicious dish!
