Creamy Cajun Chicken with Creamy Parmesan Pasta Sauce

1 lb chicken breast, sliced into thin strips
1 cup grated Parmesan cheese
8 oz pasta penne or fettuccine works well

Directions:

1. Prepare Chicken: In a large skillet over medium heat, add a little oil. Once hot, add the sliced chicken breast. Season with Cajun seasoning and cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

2. Cook Pasta: In the same skillet, add water and bring it to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

3. Make Sauce: In the same skillet, lower the heat and add a bit more oil if needed. Add the grated Parmesan cheese and a splash of cream or a non-dairy alternative. Stir until the cheese melts and the sauce is creamy. If the sauce is too thick, add a little pasta water to reach your desired consistency.

4. Combine: Add the cooked pasta and chicken back into the skillet with the creamy sauce. Toss everything together until the pasta and chicken are well coated with the sauce.
