Crab Stuffed Egg Rolls

• 1 cup crab meat (fresh or canned, drained)
• 1/2 cup cream cheese, softened
• 1/4 cup shredded mozzarella or Monterey Jack cheese
• 1 green onion, finely chopped
• 1/2 tsp garlic powder
• 1/2 tsp Old Bay seasoning (or any seafood seasoning)
• Pinch of Creole seasoning
• Salt and pepper, to taste
• Egg roll wrappers
• Oil for frying

Spicy Mayo Sauce:

• 1/4 cup mayonnaise
• 1-2 tsp Sriracha or hot sauce (adjust to taste)
• 1/2 tsp smoked paprika (optional)
• A squeeze of lemon juice

1. Make the Filling:
• In a bowl, combine crab meat, cream cheese, shredded cheese, green onion, garlic powder, Creole seasoning, Old Bay seasoning, salt, and pepper. Mix until well combined.
2. Assemble the Egg Rolls:
• Place an egg roll wrapper on a clean surface with one corner pointing towards you (diamond shape).
• Spoon 1-2 tablespoons of the crab filling onto the lower corner of the wrapper.
• Fold the corner closest to you over the filling, then fold in the sides, and roll up tightly. Moisten the top corner with a bit of water to seal the roll.
3. Fry the Egg Rolls:
• Heat oil in a deep pan or skillet over medium heat (around 350°F / 175°C).
• Fry the egg rolls in batches until golden brown and crispy, about 2-3 minutes per side.
• Remove and drain on paper towels.
4. Make the Spicy Mayo Sauce:
• In a small bowl, mix mayonnaise, Sriracha, smoked paprika, and lemon juice until smooth.
5. Serve:
• Drizzle or dip the egg rolls with the spicy mayo sauce and enjoy them while warm!
