Crab and Shrimp Stuffed Salmon

For the Salmon:

4 salmon fillets (6 oz each), skin on

Salt & black pepper, to taste

1 tsp Old Bay seasoning

3 tsp light-flavored oil (e.g., olive or avocado oil) for rubbing

For the Stuffing:

8 oz lump crab meat

8 raw medium shrimp, chopped

3 tbsp butter

6 tbsp mayonnaise

3 tbsp cream cheese

8 tbsp breadcrumbs

1 medium egg

¾ tsp Old Bay seasoning

1½ tsp onion powder

1½ tsp dried parsley

3 tsp fresh dill weed (or 1½ tsp dried)

¾ tsp salt (for rubbing on salmon)

Preheat the Oven: Set your oven to 350°F (175°C). Lightly grease a baking sheet with cooking spray.​

Prepare the Salmon: Using a sharp knife, cut a slit through the middle of each salmon fillet, about two-thirds of the way through. Rub each fillet with oil and season with salt and Old Bay seasoning.​

Prepare the Stuffing:

In a skillet, melt the butter over medium heat. Add the chopped shrimp and cook for about 1 minute and 30 seconds. Remove from heat and set aside.

In a large bowl, combine the mayonnaise, cream cheese, breadcrumbs, egg, Old Bay seasoning, onion powder, parsley, and dill. Add the crab meat and cooked shrimp to the mixture, stirring gently to combine.​

Stuff the Salmon: Carefully stuff each salmon fillet with the crab and shrimp mixture, pressing gently to ensure the stuffing is evenly distributed.​

Bake: Place the stuffed salmon fillets on the prepared baking sheet. Bake in the preheated oven for about 25 minutes, or until the salmon flakes easily with a fork and the stuffing is golden brown.​

Serve: Allow the salmon to rest for a few minutes before serving. Garnish with additional fresh dill or lemon wedges if desired.​
