Cheesy Cabbage Casserole

1 small green cabbage, chopped

1 medium Vidalia onion, chopped

8 tablespoons butter, divided

Salt and pepper, to taste

1 can (10 ounces) condensed cream of chicken or mushroom soup

1/3 cup mayonnaise

1 cup shredded sharp cheddar cheese

1 sleeve (about 30) Ritz crackers, coarsely crushed

Preheat your oven to 350°F (175°C). Lightly grease a 2-quart casserole dish.

In a large skillet, melt 4 tablespoons of butter over medium heat. Add the chopped cabbage and onion. Cook, stirring frequently, for 8 to 10 minutes, or until the cabbage is partially softened. Season with salt and pepper to taste.

Transfer the cabbage mixture to the prepared casserole dish, spreading it evenly.

In a small bowl, combine the condensed soup and mayonnaise until smooth. Spread this mixture evenly over the cabbage layer.

In another bowl, mix the crushed Ritz crackers with the remaining 4 tablespoons of melted butter until the crumbs are well coated. Stir in the shredded cheddar cheese.

Sprinkle the cracker and cheese mixture evenly over the top of the casserole.

Bake in the preheated oven for 30 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.

Remove from the oven and let the casserole sit for a few minutes before serving.
