Ingredients:
2 lobster tails + 2 lobster claws (meat removed)
1/2 cup unsalted butter
1/2 cup heavy cream
1 shallot, finely chopped
1 garlic clove, minced
1 tbsp white wine
1 tsp lemon juice
1 tbsp chopped fresh chives
1 tbsp chopped fresh parsley
Salt & black pepper to taste

Melt butter over low heat in a pan, keeping temperature low to avoid browning.
Add lobster meat, gently poaching for 5-7 minutes until tender and glossy. Remove lobster, set aside.
In another pan, sauté shallot and garlic until soft. Deglaze with white wine, simmer 1-2 minutes.
Stir in heavy cream and lemon juice, cook until slightly thickened.
Add chopped chives, parsley, salt, and pepper to taste.
Return lobster to sauce briefly to coat. Arrange lobster pieces in a bowl, spoon sauce over top.
Serve immediately.
