1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
Filling:
1/2 cup brown sugar
1 tablespoon cinnamon
1 tablespoon melted butter
Icing:
1 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract

Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs and vanilla extract.
In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients and mix until combined.
In a small bowl, mix the brown sugar, cinnamon, and melted butter for the filling.
Scoop out 2 tablespoons of cookie dough, flatten into a disc, and add a teaspoon of the filling in the center. Top with another flattened disc of dough and seal the edges. Place on the baking sheet, leaving room for spreading.
Bake for 10–12 minutes, or until the edges are golden brown. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
To make the icing, whisk the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies and let set before serving.
