Instructions
Preheat oven to 350°F (175°C).
In a saucepan, whisk together 3/4 cup sugar, flour, and salt.
Gradually whisk in milk and cook over medium heat, stirring constantly, until thickened.
In a bowl, lightly beat egg yolks. Slowly whisk a small amount of the hot mixture into the yolks, then return everything to the saucepan.
Cook 1–2 minutes more until smooth and thick.
Remove from heat and stir in butter and vanilla.
In a baking dish, layer vanilla wafers, banana slices, and warm custard. Repeat layers, ending with custard on top.
Beat egg whites with cream of tartar until soft peaks form.
Gradually add 1/4 cup sugar and beat until stiff, glossy peaks form.
Spread meringue over the pudding, sealing it to the edges.
Bake 12–15 minutes, until the meringue is lightly golden.
