Golden Italian Meatballs with Spinach, Garlic, and Molten Mozzarella Centers
Ingredients:
1 lb ground beef
1 cup fresh spinach, finely chopped
3 cloves garlic, minced
1/2 cup breadcrumbs
1/3 cup grated Parmesan cheese
1 large egg
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
6 oz mozzarella cheese, cut into small cubes
2 tablespoons olive oil (for cooking)
Directions:
Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.

In a large bowl, combine ground beef, spinach, garlic, breadcrumbs, Parmesan, egg, Italian seasoning, salt, and pepper. Mix gently until just combined.
Take a small portion of the meat mixture, flatten it in your palm, place a cube of mozzarella in the center, and wrap the meat around it to form a ball.
Repeat until all meatballs are formed.
Heat olive oil in a large skillet over medium heat. Sear meatballs on all sides until golden brown, about 6–8 minutes total.
Transfer meatballs to the prepared baking sheet and bake for 10–12 minutes, until fully cooked and cheese is melted inside.
Rest for 3 minutes before serving to allow juices to settle.
