* 2 boneless, skinless chicken breasts, thinly sliced
* 8 oz penne pasta
* 1 zucchini, sliced into half-moons
* 1 red bell pepper, thinly sliced
* 1 yellow bell pepper, thinly sliced
* 2 tablespoons olive oil

* Juice and zest of 1 lime
* 1/4 teaspoon cumin
* Salt and black pepper to taste
* 1/4 cup chopped fresh cilantro or parsley (optional)
* 1 tablespoon lime juice (extra for drizzling)

Preparation

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions. Drain and set aside.

Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced chicken, seasoning with salt, pepper, and cumin. Sauté for 5–6 minutes or until the chicken is golden and fully cooked. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic, red and yellow bell peppers, and zucchini. Cook for 4–5 minutes until the vegetables are tender-crisp.

Return the cooked chicken to the skillet. Stir in the lime zest and juice, cooking for an additional 1–2 minutes to let the flavors meld.

Add the cooked pasta to the skillet and toss everything together until well combined and heated through. Taste and adjust seasoning with salt and pepper if needed.

Garnish with chopped fresh cilantro or parsley and drizzle with extra lime juice before serving.
