Ingredients

For the Vegetable Patties

1 cup Brussels sprouts, finely chopped (150 g)

1 cup sweet potato, peeled and grated (150 g)

1 cup butternut squash, peeled and grated (150 g)

1 cup carrot, peeled and grated (120 g)

1 small onion, finely chopped

2 cloves garlic, minced

2 eggs (or flax eggs for a vegan option)

½ cup breadcrumbs or oat flour

½ tsp salt

½ tsp black pepper

½ tsp paprika

½ tsp cumin (optional)

2 tbsp olive oil (for cooking)

For the Creamy Avocado Cilantro Sauce

1 ripe avocado

½ cup fresh cilantro

1 clove garlic

Juice of 1 lime or lemon

3–4 tbsp olive oil

Salt to taste

2–3 tbsp water (to adjust consistency)

Preparation Method

Step 1: Caramelize the Brussels Sprouts

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped Brussels sprouts and sauté for 6–8 minutes until softened and lightly caramelized. Remove from heat and let cool slightly.

Step 2: Prepare the Patty Mixture

In a large bowl, combine the grated sweet potato, butternut squash, carrot, chopped onion, garlic, and the caramelized Brussels sprouts. Add the eggs, breadcrumbs, salt, pepper, paprika, and cumin. Mix well until the mixture holds together.

Step 3: Shape the Patties

Using your hands, form small to medium-sized patties. If the mixture feels too wet, add a little more breadcrumbs.

Step 4: Cook the Patties

Heat the remaining olive oil in a pan over medium heat. Cook the patties for 3–4 minutes per side, until golden brown and crispy. Transfer to a plate lined with paper towels.

Step 5: Prepare the Avocado Cilantro Sauce

In a blender or food processor, combine avocado, cilantro, garlic, lime juice, olive oil, salt, and water. Blend until smooth and creamy.

Serving Suggestions

Serve the patties warm, drizzled with the creamy avocado cilantro sauce. They pair beautifully with a fresh green salad, quinoa, or tucked into a pita or burger bun for a healthy veggie burger option.
