Step-by-Step Method
Step 1: Prepare the Tomatoes
Wash the tomatoes thoroughly. Using a sharp knife, make a small “X” cut at the bottom of each tomato. This will make peeling easier.
Step 2: Blanch and Peel
Boil a large pot of water and carefully drop in the tomatoes for 30–60 seconds. Then transfer them into ice water immediately. The skins will peel right off!
Step 3: Fill the Jars
Place peeled whole tomatoes (or cut into halves) into sterilized glass jars. You can add a pinch of salt for flavor if you like.
Step 4: Seal and Process
Pour boiling water (or tomato juice) over the tomatoes in the jar until they are fully covered. Leave about 1 cm of space at the top. Seal the jars tightly.
Boil the filled jars in a large pot of water for 30–40 minutes to sterilize and lock in freshness.
Step 5: Store
Once cooled, check that the lids are sealed properly. Store your jars in a cool, dark place. They can last up to a year!
