– 2 lbs chicken wings
– 1 tablespoon olive oil
– 1/4 cup soy sauce
– 1/4 cup vinegar
– 1/4 cup orange juice
– 2 tablespoons honey
– 2 cloves garlic, minced
– 1 small onion, finely chopped
– 1 tablespoon grated ginger
– 2 Scotch bonnet peppers, seeded and chopped
– 1 tablespoon ground allspice
– 1 teaspoon ground nutmeg
– 1 teaspoon ground cinnamon
– Salt and pepper to taste
– Fresh thyme leaves for garnish

1. Preheat your oven to 400°F (200°C).
2. In a large bowl, combine olive oil, soy sauce, vinegar, orange juice, honey, garlic, onion, ginger, Scotch bonnet peppers, allspice, nutmeg, cinnamon, salt, and pepper. Mix well to create the jerk marinade.
3. Add the chicken wings to the marinade and toss to coat evenly. Let marinate for at least 1 hour in the refrigerator, though overnight is best for deeper flavor.
4. Arrange the chicken wings on a baking sheet lined with parchment paper, and pour any remaining marinade over the top.
5. Bake in the preheated oven for 45-50 minutes, or until the chicken wings are golden brown and crispy.
6. Garnish with fresh thyme leaves before serving.
