I saw a video a while back where someone cut potatoes up and put them in pickle brine to make French fries.
I thought that was an awesome idea but not for fries…for potato salad.
So a couple of days ago [Wednesday], I cut up some new potatoes, tossed them in a jar of brine and let them sit.
Today , I poured about a 1/4c of the brine into the water, and boiled them up.
And holy hell !!!!
So delicious!!!!
Pop a little dill seasoning, cayenne, smoked onion paprika, garlic (powder after cooking or minced in the water), mayo (or miracle whip if you’re a heathen, same opinion for adding chopped onions and/or celery) and mustard with some hard boiled eggs and bam!!!!

One could even shred some pickles and throw them in for that extra pickle punch!
Omfg that person [who made/shared the OG video] was half a genius. [I’m obviously the other, bigger half.
No bananas; suppose I could have used a pickle, but I ate them before I put the potatoes in the brine.

Yes, I know that one can add brine/vinegar post boil. I know this because I have done this. However, this method produced a different level of the flavour. Why is it so difficult to comprehend that sometimes things can be done in more than one way?
Ps. Started brining fries for dull pickle poutine, made with dill cheese curds. Will update.
