Ingredients:
1 lb beef (chuck or stew meat), cut into cubes
1 onion, diced
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, sliced
2 potatoes, diced
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 cup green beans, chopped
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
2 tbsp olive oil
Instructions:
Brown the Beef: In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides. Remove and set aside.
Sauté Vegetables: In the same pot, add the onion and garlic. Sauté until the onion is translucent.
Add Remaining Ingredients: Return the beef to the pot. Add carrots, celery, potatoes, diced tomatoes (with juice), beef broth, green beans, thyme, oregano, salt, and pepper.
Simmer: Bring to a boil, then reduce heat and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
Adjust Seasoning: Taste and adjust seasoning as needed.
Serve: Ladle into bowls and enjoy!
