Taco Stuffed Shells

  • 12-15 jumbo pasta shells
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 cup refried beans
  • 1 cup salsa
  • 1 ½ cups shredded cheese (cheddar or Mexican blend)
  • ½ cup sour cream (optional)
  • Chopped green onions or cilantro for garnish

  1. Cook Pasta Shells: Boil the jumbo shells according to package instructions until al dente. Drain and set aside.
  2. Prepare Filling: In a skillet, brown the ground beef over medium heat. Drain excess fat. Stir in taco seasoning, refried beans, and half of the salsa. Mix well and cook for a few minutes.
  3. Stuff Shells: Preheat your oven to 350°F (175°C). Fill each cooked shell with the beef mixture and place them in a greased baking dish.
  4. Top with Salsa and Cheese: Pour the remaining salsa over the stuffed shells and sprinkle with the shredded cheese.
  5. Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
