1 lb ground beef

1 packet taco seasoning mix

1 (10-ounce) can diced tomatoes with green chilies (Rotel)

1 (15-ounce) can black beans, drained and rinsed

1 (15-ounce) can corn, drained

1 bag (9.25 ounces) corn chips (like Fritos)

2 cups shredded cheddar cheese

2 cups shredded lettuce

1 cup diced tomatoes

1/2 cup diced onion

1/2 cup sliced black olives (optional)

1 cup sour cream

1 cup salsa

1/4 cup chopped cilantro (optional)

Preheat the Oven:

Preheat your oven to 350°F (175°C).

Cook the Ground Beef:

In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess fat.

Add Seasoning and Vegetables:

Add the taco seasoning mix and the can of diced tomatoes with green chilies (including the juice) to the cooked ground beef. Stir well and let it simmer for a few minutes.

Add the black beans and corn to the skillet, mixing everything together until well combined. Remove from heat.

Layer the Ingredients:

In a 9×13-inch baking dish, spread half of the corn chips in an even layer on the bottom.

Top the chips with the beef mixture, spreading it evenly.

Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.

Bake:

Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.

Add Remaining Toppings:

Remove the dish from the oven and sprinkle the remaining corn chips over the top.

Add the remaining 1 cup of shredded cheddar cheese and bake for an additional 5 minutes, until the cheese is melted.
