– 1 lb chicken breasts, sliced
– 4 cloves garlic, minced
– 3 tbsp olive oil
– 1/2 cup grated Parmesan cheese
– 1 tsp Italian seasoning
– Salt and pepper to taste
– Fresh parsley for garnish
– 1 lb baby potatoes, halved
– 2 tbsp olive oil

First, preheat your oven to 425°F (220°C). Take those halved baby potatoes and toss them with olive oil, garlic powder, salt, and pepper. Spread them out on a baking sheet, and pop them in the oven for around 25-30 minutes until they’re deliciously crispy.
While the potatoes are roasting, grab a skillet and heat some olive oil over medium heat. Add the minced garlic and sauté it until it’s nice and fragrant. Next, add your chicken slices to the skillet. Sprinkle with salt, pepper, and Italian seasoning, cooking each side for 6-7 minutes until the chicken is golden brown and cooked through.
Sprinkle grated Parmesan cheese over the chicken and let it melt for about a minute.
Once everything is ready, plate the chicken with your crispy potatoes and finish off with a sprinkling of fresh parsley. Enjoy your meal!
