Quick Beef Lo Mein

For the Beef:
1 lb beef sirloin, thinly sliced
2 tbsp soy sauce
1 tbsp cornstarch
1 tbsp vegetable oil
For the Lo Mein:
8 oz lo mein noodles or spaghetti
2 tbsp vegetable oil
1 onion, thinly sliced
2 cloves garlic, minced
1 cup sliced carrots
1 cup sliced bell peppers
1 cup broccoli florets
1 cup snow peas
¼ cup soy sauce
2 tbsp oyster sauce
1 tsp sesame oil
¼ cup beef broth
Cornstarch slurry (1 tbsp cornstarch + 1 tbsp water)
Green onions and sesame seeds (for garnish)

Marinate Beef:
Toss beef with soy sauce and cornstarch. Let sit for 10-15 minutes.
Cook Noodles:
Boil noodles as per package instructions. Drain and set aside.
Stir-Fry Beef:
Heat oil in a skillet over medium-high heat. Stir-fry beef for 4-5 minutes. Set aside.
Cook Veggies:
In the same skillet, sauté onions, garlic, carrots, bell peppers, broccoli, and snow peas until tender, about 5-7 minutes.
Make Sauce:
Mix soy sauce, oyster sauce, sesame oil, and beef broth. Add to the skillet with beef.
Thicken:
Stir in cornstarch slurry and cook until sauce thickens, 1-2 minutes.
Combine:
Toss noodles with beef and veggies, then garnish with green onions and sesame seeds.”
