Peach Crumb Muffins

2 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/2 cup unsalted butter, melted

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

2 cups fresh peaches, peeled and diced

Crumb Topping:

1/2 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup unsalted butter, cold and cubed

1/2 teaspoon ground cinnamon

Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, salt, and baking powder.

In a separate bowl, combine the melted butter, egg, milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced peaches.

Fill the muffin cups about 3/4 full with the batter.

To make the crumb topping, mix the flour, sugar, butter, and cinnamon with a fork until crumbly. Sprinkle generously over the muffin batter.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
