Cook the Chicken:
Heat the olive oil in a large skillet or wok over medium heat. Add the chicken and cook until golden brown on all sides, about 5-6 minutes. Remove the chicken from the skillet and set aside.

Sauté Garlic and Onion:
In the same skillet, add the minced garlic and chopped onion. Sauté for 2-3 minutes, until fragrant and the onion becomes translucent.

Prepare the Sauce:
Stir in the honey, soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes (if using). Let the mixture simmer for about 2 minutes to meld the flavors.

Add Broth and Noodles:
Pour in the chicken broth and add the uncooked noodles. Stir to ensure the noodles are coated in the sauce. Cover the skillet and let it simmer for 8-10 minutes, stirring occasionally, until the noodles are tender and have absorbed most of the liquid.

Combine with Chicken and Thicken the Sauce:
Return the cooked chicken to the skillet and stir to combine with the noodles and sauce. Add the cornstarch slurry and stir until the sauce thickens, about 1-2 minutes.

Garnish and Serve:
Sprinkle with chopped green onions and sesame seeds (if using) before serving.
