Lazy Girl Pecan Pie Bars

For the Crust:

  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted

  • 1 cup light corn syrup (or maple syrup)
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups pecans, chopped
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Make the Crust:
    • In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom of the prepared baking pan to form an even layer.
  3. Prepare the Filling:
    • In a large mixing bowl, whisk together the corn syrup, brown sugar, eggs, vanilla extract, and salt until smooth.
    • Stir in the chopped pecans.
  4. Assemble:
    • Pour the filling over the crust, spreading it evenly.
  5. Bake:
    • Bake in the preheated oven for 30-35 minutes, or until the filling is set and the edges are slightly golden.
  6. Cool:
    • Allow the bars to cool in the pan for about 1 hour, then transfer to the refrigerator to chill for at least another hour before cutting into squares.
  7. Serve:
    • Slice into bars and serve. These are delicious on their own or with a scoop of vanilla ice cream!
