Ingredients
For the Honey Garlic Chicken:
1.5 lbs boneless, skinless chicken thighs
1/2 tsp salt
1/2 tsp black pepper
2 tbsp all-purpose flour
2 tbsp olive oil (for pan searing)
1 tbsp butter
1/4 cup finely chopped onion
3 garlic cloves, minced
1/3 cup honey
2 tbsp low-sodium soy sauce
1 tbsp apple cider vinegar
1 tbsp chopped fresh parsley or chives (optional garnish)
For the Roasted Sweet Potatoes:
2 large sweet potatoes, peeled and cut into 1-inch cubes
1 tbsp olive oil
1/2 tsp smoked paprika
Salt and black pepper to taste
For the Green Beans:
12 oz fresh green beans, trimmed
1 tbsp olive oil or butter
Salt and pepper to taste
Directions
Prepare the Sweet Potatoes: Preheat the oven to 425°F (220°C). Toss sweet potato cubes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until caramelized and tender.
Sear the Chicken: Pat the chicken dry, season with salt and pepper, then lightly dredge in flour. Heat 2 tbsp olive oil in a skillet over medium heat. Sear chicken thighs for 4–5 minutes per side until golden brown and cooked through. Transfer to a plate and cover loosely with foil.
Make the Honey Garlic Sauce: In the same pan, reduce heat to medium-low. Add butter and chopped onion, sauté for 2–3 minutes. Stir in minced garlic and cook another 30 seconds until fragrant. Add honey, soy sauce, and vinegar, stirring well. Simmer for 2–3 minutes until slightly thickened.
Coat the Chicken: Return the chicken to the pan and spoon the sauce over it, simmering together for another 2–3 minutes so the flavors meld. Garnish with chopped herbs if using.
Cook the Green Beans: While the chicken is finishing, steam or blanch the green beans for 3–4 minutes until bright green and crisp-tender. Then quickly sauté in olive oil or butter with a pinch of salt and pepper for extra flavor.
Serve: Plate the chicken with a generous drizzle of honey garlic sauce, alongside the roasted sweet potatoes and sautéed green beans.
