Ingredients:
1 package refrigerated pie crusts (2 crusts)
1 can (21 oz) cherry pie filling
1 egg, beaten
1 tablespoon granulated sugar
1 teaspoon cinnamon (optional)
Directions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the pie crusts on a lightly floured surface. Use a round cookie cutter (about 3 inches in diameter) to cut out circles from the dough. Re-roll the scraps as needed to get more circles.
Place a small spoonful of cherry pie filling in the center of each dough circle. Be careful not to overfill to avoid leaks during baking.
Fold the dough circles in half to create a semi-circle, then press the edges with a fork to seal.
Place the cherry pie bites on the prepared baking sheet.
Brush the tops of the pie bites with the beaten egg. Mix the granulated sugar and cinnamon together, then sprinkle over the tops of the pie bites.
Bake in the preheated oven for 15-20 minutes, or until golden brown.
Let the cherry pie bites cool on a wire rack before serving.
